MEAL PREP RECIPE - Protein Guacamole

Guacamole is a classic treat for all ages. We added beans and corn to make it heartier. Give it a try using the recipe below:

  • 3 ripe avocados - pitted peeled and mashed
  • 1/2 small white onion - finely chopped
  • 1 roma tomato - finely chopped
  • 1 cup corn
  • 1 cup black beans
  • 1 lime 
  • 1/3 cup chopped cilantro - finely chopped
  • finely chopped jalapeño - as much as you want
  • salt and peppar to taste


Mix all ingredients together, squeeze lime in, and spread onto the Long Board or serve in a dish with your favorite chips or veggies for dipping. 

Serves up to four people depending how much everyone eats!
