MEAL PREP RECIPE - Basil Pasta Salad
Pasta salad is a favorite summertime lunch or dinner dish. It is a great solution when you are seeking a meal that is fresh, filling, and delicious without being warm. It is also a good alternative to green salad if that has been on repeat in your meal rotation in the summer.
- 1/2 yellow pepper finely chopped
- 1 ½ cups crumbled feta cheese (optional)
- salt and ground black pepper to taste
- 3 tablespoons balsamic vinegar
Start with a large bowl (big enough for all of the ingredients!) and combine vegetables, olive oil, balsamic vinegar, garlic, half the basil, oregano, salt and pepper. Everything but the pasta!
Cook the pasta to al dente, according to the package instructions. Salt the water generously for the best pasta flavor.
Drain the pasta, rinse it with cold water, and add it into the large bowl. Stir everything until it’s combined well and add the rest of the basil.
Optional: bring balsamic glaze and additional basil in your lunch bag to add prior to eating.
